The Glycaemic Index Diet
The glycaemic index diet is linked to the gi (or glycaemic index), a chart showing foods and an indicator of the rapidity with which the carbohydrates in the food type gets transformed to sugar in the dieters bloodstream. The believe is that slow acting food types (ie with a low Gi number), suppress your appetite for longer and help to consume less food without feeling you are always hungry.
It is also very efficient for sufferers from diabetes, as the low GI foods are beneficial in reducing surges in blood sugar levels.

1/2cupwhole wheat flour
1/2cupunbleached white flour
1teaspoonsugar
1teaspoonbaking powder
1/2teaspoonbaking soda
1/4teaspoonsalt
1eachegg
1cupbuttermilk OR sour milk (1 c lowfat milk + 1 tb vinegar)
2tablespoonvegetable oil

Directions:

Stir together the flours, sugar, baking powder, baking soda and salt.

Beat the egg, milk and oil together. Add the liquids to the flour mixture and stir just until blended.

Pour the batter onto a greased hot griddle. Serve with fresh fruit slices, unsweetened applesauce or low-calorie syrup.

Makes 12 4-inch pancakes
