When buying quality cuts of beef, you are better doing your shopping at a high street butcher instead of a big-name supermarket. A butcher will usually serve a wider range of beef cuts than the supermaket, he will know the history of his meat, is more likely to have looked after it correctly, and will usually be pleased to give you tips on the best way to cook it.


Safety in the kitchen

  • Don't overload sockets - one plug per socket is the rule, especially if the appliance takes a lot of power (like a kettle).
  • Don't run extension cables across the floor as they can become worn.
  • Is the electric kettle leaking? This can be dangerous.

Always clean the grill pan after using it.

8 lb Roast -- prime rib

Dry rub seasonings: 4 ts Paprika

2 ts Salt

2 ts Onion powder

2 ts Black pepper

1 ts Cayenne

Place dry rub seasonings over entire roast surface. Grill roast in smoker (indirect heat) for 3 to 4 hours at 200 to 250 deg. or until a meat thermometer indicates 140 deg (for M-Rare).
