The Atkins’ Diet
First invented by doctor atkins in the sixities, the atkins diet is still one of the most popular diets today. Having many well known film stars amongst its supporters, it enables fat reduction but still allows you to eat foods that are normally considered bad for diets, eg lamb and some dairy produce.
Unlike other diets, with the atkins diet you eat protein and fat, avoiding carbohydrates almost completely. Because of this, it is known as a low carbohydrate/high protein, diet.
With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including cereals and pasta made from white flour.
With the atkins diet the foods you are encouraged to eat continues to be nutrient-rich unprocessed foods such as meat, fish and poultry. You also can eat shellfish, regular full fat cheese, butter and olive oil.

1 lb Velvetta Cheese, cubed

2 c Mayonaise (or Salad Dressing

2 lb Frozen Hash Brown potatoes,

1 x Defrosted about 15 min.

1/2 lb Bacon, cooked & crumbled

Preheat oven to 350 degrees. Melt Velveeta in heavy pan over low heat, stirring. Add Mayonnaise and potatoes to cheese and mix well. Put into a 9 X 13 inch shallow baking dish and top with bacon. Bake, uncovered for 35-40 min. until bubbly and golden brown. I double this recipe and increase cooking time to 1 hour.
