The Atkins’ Diet
Although it originated back in the 1960s, the famous atkins diet is still one of the most popular diets today. Although highly controversial, it supposedly allows fat reduction whilst allowing you to eat many foods that are not normally available to dieters, for example bacon and hard cheese.
Unlike other diets, on the atkins diet it is considered good to eat fat and protein, it is carbohydrates that need to be avoided. It is often referred to as a high protein, low carb, weight loss regime.
With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including, but not limited to, cereals and pasta made from white flour.
On the atkins diet the foods you are encouraged to eat continues to be nutrient-rich unprocessed foods such as meat, fish & poultry. You also can eat shellfish, regular full fat cheese, butter and olive oil.

1 lb Shrimp, medium, cleaned,

Cooked 1 lb Feta cheese, *

1 c Scallions, sliced

1 tb Tomato sauce

1/2 c Olive oil

1/4 c Lemon juice, fresh

1 tb Parsley, chopped

1 tb Basil, fresh, chopped

1 tb Dill, fresh, chopped

1/2 ts Salt

1/4 ts Pepper

1 1/2 lb Fettuccine, or flat

Noodle ** Contributed to the echo by: Jean Hores Originally from: Kitchen Aid Cook Book Shrimp and Feta Alla Grecque * feta cheese, drained and coarsely crumbled ** noodles, cooked and drained Combine shrimp, feta cheese, scallions in a large bowl. Add tomato sauce, olive oil, lemon juice, parsley, basil, dill, salt, and pepper; mix well. Cover and refrigerate 1 hour. Toss shrimp mixture with hot noodles and serve immediately or refrigerate 1 hour and serve cold. Servings: 6
