Keep your fingers crossed that someone will splurge on handmade goat cheese, and don’t forget some local wine, beer or juice. Buy Local Food : Take a child shopping with you, pick up one of the offending products and say quite loudly "Well we’re not buying that, think of the energy it’s used up just getting here!"

2 lb coarse-ground lean pork" 1 kg

1 Tbls coarse-ground fennel [buy whole seeds and

2 bay leaves -- crushed

1 Tbls dried parsley

3 cloves garlic -- crushed

1/8 tsp hot dried red pepper flakes

1 tsp salt

1/4 tsp pepper

65 ml water

1. Mix all the ingredients carfully, let stand for 1 hour, and mix again.

2. Stuff into casings or fry plain.

Difficulty : moderate - patience needed. Precision : measure ingredients.
