Time for cooking is often in short supply, but you can cut cooking time in half by making large batches and eating the leftovers another day. In an age when the average American spends only 32 minutes a day preparing food, strategy is crucial to increasing your consumption of local food.

1 lb Italian sausage, mild

-cut into 1-inch slices 1 Onion, lg. -chopped

2 Apples; peeled and quartered

1 cn Sauerkraut, 27oz; undrained

1 c -water

1/2 c Brown sugar; packed

2 ts Caraway seed

In a skillet, cook sausage and onion until sausage is brown and onion is tender; drain. Stir in apples, sauerkraut, water, brown sugar and caraway seed. Transfer to a 2-1/2 quart baking dish. Cover and bake at 350F for 1 hour. Garnish with snipped parsley if desired.
