Ingredients And Procedures

1/2 c Peanut butter

1/4 c Shortening

1/2 c Packed brown sugar

1/4 c Granulated sugar

1 Egg

1 t Vanilla

1 c All-purpose flour

1 t Baking soda

1/2 t Salt

1 c 100% bran cereal

1 c Shredded carrots

1/2 c Chopped peanuts or

Sunflower seeds Cream peanut butter, shortening, sugars, egg and vanilla until light and fluffy. Mix flour, baking soda and salt; blend into creamed mixture. Stir in cereal, carrots and peanuts. Form into 1-inch balls; place on baking sheet, about 2 inches apart. Flatten with fork. Bake at 350F (180C) for 10 to 12 minutes or until lightly browned. Cool on racks. Store in airtight container.
