If you're eating foods out of season, it's likely that they have come a long way - try to eat food that is both locally produced and can be found at that time of year, locally!

Buy Local Food : As an ‘everything in moderation’ kind of guy, I’d find a strict local food diet fascinating but obsessive and intimidating, says Peter Marks, program coordinator for the Appalachian Sustainable Agriculture Project in Asheville, N.C. He suggests a more gradual approach: Every week or month, replace one food in your diet that’s provided by a big, faraway company with a locally grown food.

Buy Local Food : Bringing more local produce into your kitchen may leave you wondering what to do with unusual things such as Jerusalem artichokes, kohlrabi or mizuna. “I get requests all the time from CSAs asking permission to put my recipes into their delivery boxes,” Madison says. “I always say yes.” Get a good produce-based cookbook and don’t be reluctant to ask for recipe ideas from growers.

About beef

Beef is far more popular in the 'u.s.' than anyplace else on the planet. If you sum up all the steaks and burgers eaten in the whole world, you may well be amazed to find that the North america consumes roughly a quarter of the beef.

When buying beef, you are better buying from a specialist butcher rather than a self-service store. A proper butcher should really have a more extensive range of beef cuts than the generic grocery store, he will know the full history of his beef, will probably have stored it correctly, and will usually be happy to help you with advice on a few cooking tips.
