The Atkins’ Diet
Now nearly 5 decades old, the famous atkins diet achieved most of its fame during the last decade. Having many well known film stars amongst its supporters, it allows fat reduction whilst allowing many of the foods you love, for example beef and egg and cheese.
Unlike other diets, on the atkins diet you eat protein and fat, it is the carbs that are on the banned list. It is referred to as a low carb/high protein, diet.
With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including, but not limited to, cereals and pasta made from white flour.
Unlike other diets, with the atkins diet the foods you are encouraged to eat are still nutrient-rich unprocessed foods like meat, fish & poultry. You also can eat shellfish, regular full fat cheese, butter & olive oil.

2 1/4cupflour, all-purpose
2teaspoonbaking powder
1/2teaspoonsalt
1/2teaspooncinnamon, ground
2eachbananas, ripe, quartered
2eacheggs
2/3cupsugar, brown, firmly packed
6tablespoonbutter, melted
1teaspoonvanilla
1cupblueberries, fresh
  
  ---TOPPING---
1/4cupsugar, granulated
1teaspoonlemon, rind, grated

Directions:

Preheat oven to 400 degrees. Lightly grease twelve 2-1/2 inch muffin cups. Combine flour, baking powder, salt, and cinnamon on sheet of waxed paper.

Beat bananas in large bowl with electric mixer until mashed. Add eggs, brown sugar, butter, and vanilla, beating until blended. Stir in combined dry ingredients with a wooden spoon until almost blended. Stir in blueberries just until combined. Spoon into prepared muffin cups, dividing batter equally.

Prepare Topping: Combine sugar and lemon rind in small dish. Sprinkle evenly over muffins.

Bake in preheated oven for 20 to 22 minutes or until golden. Remove muffins from pan to wire rack. Serve hot.

Makes 12 muffins.
