The Glycaemic Index Diet
The glycaemic index diet system is based on the gi (or glycaemic index), a chart showing food types and a score illustrating the rapidity that the carbs in the food gets converted to sugar in the dieters bloodstream. The believe is that slow acting types of food (ie those foods with a low Gi score), suppress your appetite and mean that you can take in less food without feeling hungry.
It's also extremely good for diabetics, as the low GI foods are useful in reducing increases in blood sugar secretion.

-----filling----- 1/2 c Sugar

3 tb All purpose flour

1/2 c Apple butter

2 tb Melted butter

2 Eggs; well beaten

1 1/2 c Milk

1 c Light cream

1/2 c Ground nutmeg

-----pastry----- 1 Pastry crust for 9 inch pie

Unbaked Use pastry to line a 9 inch pie pan, fluting a HIGH edge. In a large mixing bowl- mix sugar with flour. Gradually stir in the apple butter and melted butter. In separate smaller bowl - beat eggs with milk and cream, then turn into the apple butter mixture. After well mixed, pour into the pastry lined pie pan. Sprinkle top with nutmeg.
